What is Matcha?
Matcha tea comes from the Camellia sinensis plant, or tea plant. It is protected from the sun with soft mats to slow its growth and increase the presence of amino acids, among other substances. This is also why it has such an intense color.
The main cultivation area is Zhejiang, China, an ideal location due to its location and atmospheric qualities. It is always harvested the old-fashioned way, that is, by pure and simple hand. Only once a year, and generally in early May.
After harvesting, the leaves are dried and ground in a stone mill using a completely traditional method, obtaining the smooth powder we are familiar with. The best thing is that, thanks to this process, 100% of the leaves are used with all their properties, resulting in a quality product.
